Thyme has a long history of use in herbal medicine when treating chest and respiratory problems such as coughs, bronchitis, and congestion. Thymol, the potent oil found in thyme, protects and increases healthy fats found in cell membranes and other cell structures such as the amount of DHA in the brain, kidney and heart cell membranes. It contains a variety of flavonoids and is high in antioxidants, vitamins, minerals, and fiber. And its antimicrobial properties are significantly effective against a host of different bacteria and fungi. I love using it as a base for my salad dressings, soups, and steeping it in tea. Thyme should be a true staple in everyone’s herb garden!
